Absolutely Perfect Soft Scrambled Eggs

Dairy free proves to be the perfect way to go for this recipe. The first key to the perfect texture is whisking the eggs until frothy. The second key is to turn off the heat before the eggs are all the way cooked. The Third key is to use Olive Oil. This will give you out-of-this-world fluffy and tender scrambled eggs.
- 4 Eggs
- 1 Teaspoon Olive Oil
- Salt & Pepper to taste
: First crack the eggs into a bowl. Add Salt & Pepper to taste. Use a whisk or fork to beat the eggs until lightly frothy. Place 1 teaspoon Olive Oil in a hot skillet and swirl to coat pan. Add egg mixture and stir with a Silicone Spatula. As eggs begin to solidify turn off heat or remove from burner if using an electric stove. Continue stirring until cooked thru and still slightly wet. Immediately transfer to plate and serve.
