Smoked Salmon & Spinach Salad with Hearts of Palm & a Lemon Vinaigrette

This is a refreshing salad for a weekend brunch or for a quick week night supper. Spinach is a geat source of Vitamins A, C, D, B6, Calcium, Folate, Iron & Potassium. Salmon is a great source of Omega-3 fatty acids and protein. We suggest using wild smoked salmon for this recipe.

Ingredients:

  • 4 cups Baby Spinach
  • 8 oz Smoked Salmon (Thinly Sliced)
  • 1 cup Hearts of Palm (Sliced)
  • 1 cup Cherry Tomatoes
  • 1/2 Red Onion (Thinly Sliced)
  • 2 Tbsp Capers
  • 1/2 Sliced Avocado (Optional)
  • 3-4 Tbsp Lemon Vinaigrette
  • Salt & Fresh Cracked Pepper to Taste

Lemon Vinaigrette:

  • 1/2 tsp Finely Grated Lemon Zest
  • 2 Tbsp Fresh Squeezed Lemon Juice
  • 1/2 tsp Dijon or Wasabi Mustard
  • 3-4 Tbsp Extra Virgin Olive Oil
  • 1/2 Red Onion (Thinly Sliced)
  • 1-2 tsp Finely Chopped Dill (Optional)
  • Salt & Fresh Cracked Pepper to Taste

Instructions

  1. For Lemon Vinaigrette combine all ingredients into a bowl and whisk together until the mustard emulsifies. (Tip - You can also save old mustard jars to easily combine ingredients into and then shake to combine and store leftovers)
  2. Place spinach, hearts of palm, tomatoes in a chilled stainless steel or glass salad bowl. Add 1-2 Tbsp of Lemon Vinaigrette (or to taste) and toss the salad gently. 
  3. Divide salad mixture onto 2 large plates. Arrange smoked salmon & red onions on top of the spinach salad, sprinkle with capers.

This salad can also be a great first course (smaller portions) for a special dinner. Enjoy!
